Fat Day: Day 41

Man I was really packing in the calories today!  I don't know what's gotten into me.... I have got to get back on track.  Today my husband and I went to my son's preschool to talk about living in Suriname.  They are studying South America.  So of course we treated ourselves to breakfast.  I even got one of those deadly delicious scones for later.  My husband is the one who talked me into it.  He is known for  his extreme dislike of sugary breakfast foods but when it comes to this scone, I guess that opinion is thrown out the window!

Breakfast:  Everything bagel with egg, bacon, and cheese (I know...I can't seem to quit the bacon!) and coffee
Snack/Lunch:  The yummy chocolate chip scone

I made home made pizza tonight.  It was really yummy, even my toddler loved it!  I really enjoy making yummy pizza at home.  It's sometimes hard to find the time.  It's not something you can really prepare ahead of time.
Dinner:  Whole wheat pizza topped with cheese, olives, and pepperoncinis

It looks like it's going to rain the rest of April!  I will be heading to the grocery on Friday...my aim is to keep bread products out of the cart!

Sunshine!: Day 40

It was anther beautiful but very long day!  I decided to eat my breakfast out instead of walking because I knew I would be at the park all day after I picked up my older son from school.
Breakfast: Coffee, wheat toast with cheese and egg.

I was planning to skip lunch because of my big breakfast but I ended up eating some snacks I had packed for the boys.  It was too hard to get pics of them.  I felt like I was chasing a monkey all day; keeping your eye on a toddler who is fearless at a play ground, is tiring!

Snacks/Lunch:  1/2 a PB&J tortilla, a clementine, and 2 large carrots, and a handful of grapes

We all were super hungry and dirty when we got home from a day at the park.  My husband so kindly made dinner while me and the boys took a bath.  Dinner was very satisfying!

Dinner:  Whole wheat spaghetti, with spinach, and turkey meat along with a salad tossed with light ranch dressing

Dessert: I have been raiding the chocolate chips!  3 handfuls! I will most likely eat a handful or two of popcorn while watching Mad Men

It's Monday: Day 39

I think Spring has finally arrived in the Hudson Valley.  It was an amazingly beautiful day.  I was able to take a 2 hour walk and enjoy the sun and the birds.  But then of course I had to stop for ice cream! Now that it is warm, I don't have to find places to eat in the morning after I drop off my son at school; I'll just go for hikes or walks.  So excited!


Breakfast:  Whole wheat tortilla, scrambled eggs and salsa with coffee

I bought the frozen chicken patties for my husband again.  I'm not the biggest fan, but I didn't feel like a salad today.
Lunch:  Chicken patty, lettuce, light mayo, on wheat bread with a side of ketchup

Snack:  I had four gram crackers (they are so addictive!) and a almond joy kiddi ice cream.  Also 2 handfuls of chocolate chips

I made a yummy dinner.  Coconut rice is what made it so great.  Coconut rice is something that they we would eat in Suriname when we were in Peace Corps.  It was a special occasion dish.
Dinner: Coconut rice with carrots and green beans and boneless skinless chicken thighs in a peanut sauce

Protein! : Day 38

As I'm writing this I am so full!  I totally ate my share of meat today.  I didn't get any sleep last night, my toddler must be growing, teething, wanting to make me crazy, it could be one or all of these!  My wonderful husband let me go back to sleep for a couple hours and looked after the boys.  He then made us all breakfast!  Breakfast:  Toast and 2 poached eggs with coffee

After having a lazy morning and talking about bills and budgets with my husband, we decided we better go out to eat before we make our final budget for the summer.  That way it won't count...yep that's how we roll!
Lunch:  Texas Roadhouse bacon, cheese burger with fries, I also had a margarita on the rocks
I usually get a steak at Texas Roadhouse but going to our seats we passed a guy that just got served a yummy burger and I was persuaded differently.  I can't remember the last time I was this full.  I think the bread and the fries really threw me over the edge.  I think I'm burger and fried out for a while.

Our neighbors invited us over for dinner.  We love hanging out with them and they always make the best food.  We were so full from lunch but of course we ate our share at their house too and didn't skip dessert.  It's amazing what kind of damage you can do on a weekend food wise when you are letting loose!



Dinner:  Steak with mushroom and onions on a flat bread, roasted potatoes, and a small salad.
Dessert:  Brownies, with ice cream and fruit (I ate an extra sliver of brownie not in the pic)
My schedule of me exercising everyday from 4-5 did not pan out.  We will discuss our schedules again tonight and try to make something work this week.  I hate it but I need it!

2 in 1: Day 36 and 37

Last night my hubby and I watched a movie.  I thought I'd post the blog afterwards but my toddler who's teething decided differently.  So I am including yesterday and today's meal/snack into one.
Friday was errand day.  We did hair cuts and groceries and then all played at the park.
Breakfast:  Whole wheat tortilla, s eggs with ketchup and coffee
Since we went to the grocery later in the day I was not tempted to buy a muffin. We went as a family and believe it or not these family trips to the grocery always seem more crazy than when it's just me and the kids.  My husband adds a weird spin to the chore.  I grabbed a rotisserie chicken from the deli for lunch.
Lunch:  Spring salad with rotisserie chicken and light honey mustard dressing
Snacks: Clementine, gram crackers, and a seltzer
As for dinner last night we totally splurged and ordered pizza from across the street and ate until we could eat no more.
Dinner:  Meat pizza!  I had about 6 pieces; remember these are personal size pizzas

Day 37
Today we had tons of snuggle time in our family bed and then all went to breakfast.  This is my favorite way to start a morning.  I went carbs crazy but made up for it by repeating yesterday's lunch.
Breakfast: Half a french toast order and half a egg, cheese, on bread.  And the best coffee ever!  
Lunch: Salad with rotisserie chicken & light honey mustard dressing
Snacks:  PB&J on a whole wheat tortilla & 2 Clementines
I was pretty hungry, hence the picture of my half eaten dinner....when I'm really hungry I always forget to take a pic.  Dinner: Black bean quesadillas topped with sour cream, guac, onions, and salsa.  Whole wheat tortilla chips and a small salad with light ranch dressing.

Leftovers: Day 35

Today was beautiful outside!  I'm so looking forward to the warmer weather.  Today's food wasn't very exciting and I didn't get my window to workout. I'm actually trying to think of something yummy to snack on right now...but nothing comes to mind.  Grocery day is tomorrow, so we are empty.

On my egg burrito this morning I put some fat-free mozzarella.  I bought this at Wal-mart last week, it's kind of hard to find around here.  I would eat this like crazy when I was on Weight Watchers, today I realized it's kind of like tasteless plastic, not worth the money,  I think I will just go without.
Breakfast:  Whole wheat tortilla, scrambled eggs, and plastic cheese

The rest of the day consisted of leftovers.
Lunch: Famous chicken noodle soup


I totally thought we were going to the Texas Roadhouse tonight...I could have sworn my husband and I agreed on that.  But somewhere there was a miscommunication...so I had leftover chicken for dinner.  Talk about disappointment  

Dinner: Baked chicken and zucchini a spring mix salad and light ranch dressing and a boiled egg.

I usually buy Stony Fields Organic Yogurt or greek yogurt.  However, Wal-mart does not carry Stony Fields and their greek yogurt is too expensive so I grabbed La Yogurt, it tastes yummy at first but then leaves a bad taste in my mouth like it has aspartame or something in it...yuck...never again!
Snacks:  2 handfuls of pretzels and a cup of yogurt

Carbs: Day 33

My husband went into NYC early this morning so it threw us all off schedule.  Not that we ever have a set schedule...I'm working on this.  I think I need more structure that allows me more time to myself.  Now that my husband has a little more free time, I'm trying to set my plan in motion.  Starting tomorrow I'm going to exercise between 4pm-5pm.  I don't think this is the best time slot but I think it will work best for the family. I think it will help me tone up a bit.  I tried on a few dresses today at Target...boy do my arms need some toning!!  Wish me luck!



We stopped and got doughnuts since we left the house so early.  I ate 1 and 1/2...better than the other day. I wish there was drive through places that had healthy breakfasts or real eggs.  I grabbed a coffee at Starbucks at our Target.  
Breakfast: A chocolate glaze doughnut and a half a blueberry one with a coffee

I was so hungry by lunch time.  I really should just stick to protein in the AM.  I made a quick wrap at home that really hit the spot.
Lunch:  Whole wheat tortilla, 2 pieces of turkey bacon (left over from Easter), swiss cheese,spring mix salad, and light ranch dressing with a side of carrots.  Also a handful of bunnies.

We picked up my husband from the train around 4pm.  We were all a little hungry so we stopped and had some bar food.  Not the best choice and not very satisfying.  Of course around 9pm my tummy started growling, so I made a bowl of cereal.  I seriously had a lot of carbs today!!  Glad I'm starting to workout tomorrow.  It's been a while...wish me luck on keeping up with Jillian Michaels in her workout video.
Dinner:  A beer, 2 small slices of the pizza, and half the pretzel with mustard
Late Snack:  Flake/strawberry cereal

April: Day 32

I can't believe I have been blogging for a whole month. I'm going to keep going. After 31 days of snapping pics of my food, I really feel that I have learned a lot about myself.  Just to list a few: I eat a ton of tortillas, eggs, and coffee, I eat out a lot more than I thought, I treat myself very frequently with sweets, I eat healthier than I thought and having accountability pushes me to take the pictures, be honest, and makes me actually sit down and do something at the end of the day...even if it is ranting on about my day, family, and the food I eat.  Oh...yeah and I'm losing weight!

April is my favorite month out of the year.  I celebrate my birthday and Earth day on the same day and Spring starts coming on in full effect. There is nothing like sunshine and blooming flowers to lift the spirit!  My little guy and I enjoyed a yummy breakfast together.
Breakfast:  Egg and cheese on chabatta bread and coffee

I wasn't planning on eating lunch; I was still full from breakfast but my toddler decided not to eat his lunch so I did.  I should have just wrapped it up.  My goal for this week starting tomorrow will be not to eat off of the boys plates!
Lunch:  Peanut butter and blueberry preserves on a whole wheat tortilla with a few grapes
For dinner I made my famous (to my boys) chicken noodle soup.  All of my boys love it!  I used the chicken broth from last weeks chickens that I bought in a frantic at the store.  I also made beer bread.  This is not the healthiest but it is super easy and very tasty.  If there is ever a pot luck in the fall or winter months I love to bring beer bread, it is always a hit.

Beer Bread Recipe: 
3 cups of flour
3 teaspoons of baking powder
1/4 cup of sugar
1 (12oz) beer
1/4 cup of melted butter
Preheat oven to 375, sift flour, mix dry ingredients, add beer.  Geese a bread pan, plop it in and poor the butter on top.  Cook for 1 hour.


Dinner: Chicken noodle soup with a slice of beer bread
Dessert/snacks:  ~ 6 handfuls of jelly beans (I'm throwing the rest out tonight...it's getting ridiculous!)

Easter: Day 31

Today we had another family day. We enjoyed a lot of snuggling in bed and then had a late yummy breakfast.  I made the simplest homemade biscuits that tasted great!  Click here 'biscuit recipe' if you want to try them.  We also had turkey bacon...since it was a holiday I decided to ignore the fact that I recently read an article that said processed foods have a correlation to cancer.  We love bacon, so I think  we will reserve it for holidays only. It was nice outside with little wind, so we went for a family hike and brought along our morning coffee.
Breakfast:  Scrambled eggs,  3 biscuits, 4 pieces of turkey bacon, and an orange juice and coffee
We skipped lunch but I did munch on some chocolate easter candy, I kept going back to the bag...so lets say 2 large handfuls! I also had another rice crispy treat.

I decided to go with a simple Easter dinner.  We don't have family near us so for most of the holidays except for Thanksgiving (which we spend with great friends) it's just us.  So I cooked a pork tenderloin.  I had just grabbed a seasoned one at Wal-mart, turns out that I grabbed the peppercorn and garlic one....and boy was it peppery.  It was way too spicy for all of us.  We mixed it in with the potatoes to help with the spice.  But never again will I buy that one.
Dinner:  Mashed potatoes, brussel sprouts, and peppery pork tenderloin.
Dessert:  5 peeps

Lazy Day: Day 30

Today was beautiful and relaxing.  We took the boys to two Easter egg hunts today.  We also treated ourselves...yep..the yummy scone I always talk about and my favorite coffee.  We really went to two different coffee shops to get exactly what we wanted.  This of course was our second breakfast.
First breakfast:  Berry flake cereal
Second Breakfast:  yummiest chocolate chip scone and best coffee ever

I was so full from the scone.  I'm pretty sure my stomach has shrunk a bit and I'm not nursing as much so I'm still adjusting to how much I should eat.  I took a two hour nap with my toddler, he wasn't feeling well.  It felt nice to lay in bed with the curtians open and have the sun hitting my face while I napped and read.  I snacked quite a bit today.

Snacks:  A handful of bunnies,  4 peeps, and 3 rice crispy treats!

As for dinner...I totally forgot to take a picture.  I think I was so hungry from not eating lunch that it wasn't until I was on my last bite that I remembered that I hadn't.  We had meatball subs.  I really tried to cut down on the bread tonight.  Trying to make up for all the treats I had today.  I'm so glad Easter is tomorrow.  My family really enjoys treating themselves during holidays...and holidays to us start days in advance.  For example we have birthday Months...not weeks or days but totally celebrate birthday month...it can get treat dangerous!!

Dinner:  Half a whole wheat hoagie bun with 5 meatballs (no add cheese) and a spring mix salad with honey mustard

Family: Day 29

Oh hello doughnuts!  Even though my husband has some things to finish up before being completely done with his PhD; today we pretended that all was done.  We snuggled in bed as a family until the boys were going stir crazy.  The two of us stayed in bed reminiscing of when we didn't have kids and could read books and drink coffee in bed; mean while hearing our toddler in the kitchen unrolling the foil and wax paper and emptying out a box of zip lock baggies.  There's alway a price to pay if I stay in bed longer.  We decided to finally get up out of bed at 7:30am (yep that's sleeping in) and all go get doughnuts.  I hate to admit it but I ate 3!  
Breakfast: A chocolate glaze, blueberry, and coffee role, & iced coffee

We went to a near by zoo today and then to their town playground with the boys.  It got a little chilly so we had a picnic in the car.

Lunch: Whole wheat bread, turkey breast deli meat, and swiss cheese.  A handful of strawberries and grapes.

So my greatest Easter candy weakness are peeps.  I love peeps.  My husband thinks they are horrible.  That just means more for me.  I've held back but finally broke down and bought them yesterday at the store.  Holidays treats are the hardest for me to control.

Snacks:  3 handfuls of jelly beans and 5 peeps

We needed a quick dinner so I heated up the frozen pizza we had in the freezer.  I ate way too much of it!  Tomorrow is suppose to be beautiful and we hope to go on a hike, maybe I can work off some of today's food.  
Dinner:  Spring mix salad topped with light honey mustard dressing and 2 1/2 large pieces of pepperoni pizza.
