Day 17: Burger

It's been a long week and it's only Wednesday!

Breakfast: Scrambled eggs, Weight Watchers cheese, on whole wheat flat bread and coffee

I really enjoyed my leftover lunch of the lentil stew.  I argued with myself over if I should eat it or eat what my kids were having PB&J.  We don't have a microwave so heating something up is a mini-event.  I finally talked myself into heating it up.  I felt like I had already had my bread intake in the morning.

I made brownies today.  I have just one picture but I did eat 2!

Snack: 2 brownies




It's been a long week and the whole family was feeling it!  We decided to head out to a restaurant.  Before we did we stopped by the thrift store to browse and let the boys play with the toys.  This is one of ways to pass the time in our small town.   We ended up buying 5 puzzles for the kids and some dominoes.  We took one of the puzzles and the dominoes into the restaurant.  These two things made for great family fun while we waited for the food.  I'd never thought to bring a game or a puzzle to dinner but I will grab one now every time we head out to eat.  We all had a great time!

Dinner:  2 yummy beers, a burger, fries, and coleslaw

Day 16 :Pajama Day




It was so cold today school was canceled, not because of snow because of cold!  I don't think it got out of the negatives just like I didn't get out of my pajamas!


Breakfast:  Toast with butter, coffee, and 2 fried eggs


My oldest son was still sick so I spent most of the day taking care of him.  I made a a quick but warm lunch for us and he had chicken noodle soup leftovers from the restaurant the other day.


Lunch:  Chicken nuggets, mac, a little buffalo sauce with a seltzer





Dinner was nice.  I realized when I set the table that this was our third day to have pork.  When planning the menu I didn't mean to do that.  The funny thing is we usually only eat pork once or so a month.

Dinner:  White rice, pork chop, and roasted carrots and green beans



I did a lot of snacking throughout the day!

Snacks: Brazilian nut bar, hot cocoa, beer, pretzels and hummus

Day 15


Today my oldest son stayed home sick.  Although he was sick the sun came out so we went out for a bit.  It was nice to get out in the sun even though it was freezing.

Breakfast: 2 fried eggs and Coffee

We ate lunch at a deli.  One thing this town has going for it, it has a lot of sandwich shops.






Lunch: Grilled chicken salad sandwich with provolone cheese on wheat bread and a side of pickles.

Tonight's dinner was a surprise.  I had a recipe printed off, I thought it was one I tried last month but halfway through cooking I realized this was not the coconut curry lentils recipe.  However the 'lental stew' ended up being tasty.  I surprisingly had some ham in the fridge that the other recipe didn't call for but this one did!

Dinner:  Lentils, spinach, tomatoes, potato, carrots, onion and garlic topped with ham.


Tomorrow is suppose to be really cold, I looked a few minutes ago and at 8am it's suppose to be -12 degrees!!

I had forgotten to buy some beef for one of my dinners this week so I made a quick stop to pick it up.  I like many grabbed a few snacks to survive the cold tomorrow. I however decided to indulge a little tonight.

Snacks: Chocolate covered almonds, 2 beers, and a few handfuls of these gross cheese things!

Day14:

It was a waffle morning!  Not much to write about today. I stayed inside all day.  It was extremely cold this morning -1 degrees, snow just kept falling from the sky.  I think next year around this time I need to take a trip to somewhere warm.  I'm feeling trapped and I think this is only the start; I don't think spring is going to come until May!

Breakfast:  Waffle with flax seed, Banana, Maple Syrup, and a Coffee









Lunch: Leftover Chili, Cornbread, Cheese, and Light sour cream










Dinner:  Tortellini, Asparagus, and Ham
















Snacks: Pretzels, Hummus, and late night bowl of cereal

Day 13: Weekend Cravings

It's Saturday and my husband got up with the kids so I could sleep in.  Yippee! Usually I cook a big breakfast on the weekends but the boys had already eaten so I just ate a piece of fruit and then nibbled on the leftover cornbread from the other night.

Breakfast:  Coffee, Banana, Cornbread







We ate lunch late.  I used some of the leftover turkey meat from the meat balls to through together some burritos.  I spiced up the lunch by making guacamole and adding some cilantro to the burritos.  It was nice to have something taste so fresh in the winter!

Lunch:  1 Turkey burrito, Weight Watchers cheese, Sour cream, and Cilantro.  With a side of chips and guacamole












We got out in the snow today I think we got 6 or 8 inches today.  It felt nice to run around and be outside and play with my oldest son.  I am dreaming of Spring though!  I didn't feel like cooking up something big.  I always have chicken strips or chicken nuggets in the freezer for this reason.  They aren't healthy but they cook quick and the boys are sure to eat them.  I did whip up some hummus though.  I  haven't done this in a while.  Glad I did.  I now have a jar full in the fridge and two in the freezer.

Dinner: 2 and half Chicken strips, Carrots, Hummus, and Lima beans



Hummus Recipe
-1lb of dry beans (soaked and cooked) or 3 cans rinsed
-1/2 cup of olive oil
-1 cup of Tahini (you can use natural peanut butter too)
-1 TB of salt
-1teaspoon of cumin
-3/4 cup of lemon juice


 I haven't snacked much the last couple of days but it caught up with me today.  I apologize for not having portion pictures.  I just kept going back for more!  Ugh!

Snacks: Wheat Thins, Gram Crackers, and my famous brownies with milk!  ( I will share the recipe another time )










Day 12: Grocery Day

I had a strange morning, most spent at the grocery store.  I grabbed a small breakfast but made up for it with a big portioned lunch and dinner.

Breakfast:  Coffee & Banana
Snack:  I had 2 Gram Crackers at the grocery (no picture; I was juggling too many things!)

I had worked up an appetite. The veggie leftovers form the other night were for lunch.  That is one of our large plates.    I spent two and half hours at the grocery store with two kids.  I admit I was going slow and letting the boys mess around.  It's so cold out and not many places to go so I was letting them get some energy out.  But my toddler had to go to the bathroom half way through the store and then had to go again before we finished the last isle.  Taking a potty training toddler to a public bathroom is an  event; add an antsy 5 year old to the scenario to it and you have a circus act in the large stall at the end of the bathroom!

Lunch: Potatoes, Corn, & Green Beans

Since it's Friday.  We ate pizza as usual.  This week's was bought at the store.





Dinner: 3 pieces of Peperoni pizza

Day 11: Not Feel'n the Food

Not sure if it's the weather or what but my apatite is blah.

I repeated my lunch yesterday for breakfast.  My husband was reading the blog and said "wait you had an egg sandwich for lunch; that looks so good". I decided to make it for breakfast.  Thank goodness!  I had to use the same picture from yesterday because I couldn't find my phone to take a picture.

Breakfast:  2 fried egg sandwich, Weight Watchers cheese, on wheat flat bread.

Our fridge is once again empty; more empty than usual.  I think we eat more on three day weekends.  So I had to pull something from the freezer for lunch.   Something left over from Christmas!







Lunch: 3 Delicious Sausage Balls (they are truly sooo fattening!!!)


Dinner was a favorite crock-pot sweet potato chili.

2 cans of black beans
2 cans of red kidney beans
2 cans of diced tomatoes
1 purple onion
5 cloves of garlic
1 green bell pepper
1 tablespoon of coco
1/2 teaspoon of cinnamon
